Don’t get me wrong, I love a good stuffed pepper. However, this recipe was inspired by a stuffed pepper recipe that I found a few months ago. I tweaked a little more than just removing the peppers and replacing with zucchinis, because I wanted it to be faster (when I’m hungry I am haaaangry, and it can’t be done fast enough). And honestly, I think it tastes a little better if I do say so myself!
1-2 pounds of ground turkey
1 package of taco seasoning (1 pkg per lb of meat)
1 can of black beans
1 can of whole kernel corn
1 cup of salsa
1 cup of cheese
3-4 zucchinis halved and scooped
Preheat oven to 400.
Brown the turkey and mix in taco seasoning.
In a large bowl, combine meat, beans, corn, salsa, and cheese and stir till combined. Scoop mixture into halved zucchinis.
In a greased (or in my case olive oiled) Pyrex dish, place stuffed zucchinis in dish, and bake in oven for 40 minutes. Garnish with cheese and serve!
*There is usually enough of the meat mixture to have left overs for the next day. It can be served over a bed of Romaine for taco salad, or even put in corn tortillas for a low calorie taco option!*
